Oat Bran Raisin Muffins

These easy to make, tasty, and fibre-rich muffins are perfect for a quick brunch or snack.

Ingredients:

2 cups oat bran
1/4 cup packed brown sugar
2 teaspoons aluminum free baking powder
1/2 cup raisins
1 cup plain low-fat yogurt
1 large egg, slightly beaten
1/4 cup milk
1/4 cup liquid honey or molasses
2 tablespoons extra virgin olive oil
1 teaspoon grated orange rind

Directions:

1. Preheat oven to 400°F (200°C).
2. In a large bowl, mix dry ingredients.
3. In another bowl, combine all remaining ingredients then add to dry ingredients.
4. Stir until just dampened.
5. Spoon batter into 12 greased or paper-lined muffin cups.
6. Bake at 400°F (200°C) for about 20 minutes or until muffins are golden brown.

Makes 12 muffins.
