Carmelized Onion Dip
This creamy onion dip is great when paired with crispy vegetable dippers, breaded vegetables, roasted vegetables, breaded meat or fish or any other combination you like.
Ingredients:
1 tablespoon olive oil
1 tablespoon melted butter or coconut oil
2 sweet Vidalia onions (medium size), finely chopped
1 large garlic clove, minced
1/2 cup chicken broth
1/8 freshly ground black pepper
1/4 teaspoon dried thyme
1/2 teaspoon onion salt
2 teaspoons Worcestershire sauce
You will also need:
1 cup Greek yogurt
1/2 cup cream cheese
2 tablespoons chopped fresh chives, divided
Salt to taste
Directions:
1. In a medium frying pan, warm olive oil and butter. Add onions and sauté until translucent (about 4 to 5 minutes).
2. Stir in minced garlic, chicken broth, ground black pepper, thyme, onion salt and Worcestershire sauce. Bring to simmer and cook, stirring occasionally for about 30 to 35 minutes, or until onions are deep golden brown. Remove from heat and let onions cool down to room temperature.
3. In a food processor or mixing bowl, mix together cream cheese and greek yogurt until smooth. Add cooled onion mixture and 1 tablespoon of chopped chives and mix until smooth. Taste and adjust seasonings if needed.
4. Transfer onion dip to serving container (or individual dip dishes), garnish with remaining 1 tablespoon of chopped fresh chives and serve with baked potatoes or breaded meat.
Makes about 8 to 10 servings.

Western Yellow onions have the most flavonoids, eleven times the amount found in Western White, the variety with the lowest flavonoid content.
