Low Fat Strawberry Mousse
No one will believe that this creamy, delicious dessert is low in calories and fat!
Ingredients:
2 envelopes unflavoured gelatin
1/2 cup water
2 cups pureed strawberries
3/4 cup low-fat plain yogurt
1/2 teaspoon grated orange rind
4 egg whites
1/4 cup sugar
Garnish:
Fresh strawberries
Whipping cream (optional)
Note: You can use fresh or frozen strawberries, pureed in a food processor, blender or food mill.
Directions:
1. In small saucepan or microwave dish, sprinkle gelatin over water; let stand 5 min to soften.
2. Heat gelatin mixture over low heat until gelatin has dissolved or microwave 50 sec on MEDIUM (50%). Mix well.
3. In bowl, combine strawberries, yogurt, orange rind and gelatine mixture.
4. Refrigerate until mixture begins to set (i.e. reaches the consistency of raw egg whites).
5. In large bowl, beat egg whites until soft peaks form.
6. Gradually add sugar, beating until stiff peaks form.
7. Whisk about 1/4 of beaten whites into strawberry mixture; fold in remaining whites.
8. Spoon into serving dish.
9. Cover and refrigerate at least 1 h or up to 2 days before serving.
10. Garnish with sliced fresh strawberries and whipping cream (if using).

A great part of any company dinner can be prepared the day before. If you have room in the freezer you can prepare a lot of dishes well in advance, freeze them in plastic containers and use them when needed.
First thing to do is to select your menu and make a list of the principal dishes. With each dish have a list of the vegetables, sauces or other things to be served, and the time for serving. This will insure the dishes being ready at the proper moment.
