Light Salsa
Ingredients:
1 lb tomatoes, cored, seeded and chopped
1/2 cup thinly sliced green onions
1 medium size jalapeno pepper (cored, seeded and finely chopped)
1 clove garlic (minced)
1 teaspoon chopped fresh cilantro
1 teaspoon olive oil
1/2 teaspoon rice vinegar
1/2 teaspoon salt
1/8 teaspoon ground black pepper
Directions:
1. Prepare all ingredients.
2. In a medium bowl toss tomatoes, onions, garlic, jalapeno peppers, oil, vinegar, salt and black pepper until well combined.
3. Set aside for 1/2 hour to let flavors mellow.
4. Cover and refrigerate until serving time.
5. Just before serving mix in chopped cilantro and transfer to a serving bowl.
6. Garnish with parsley leaves or cilantro sprigs.
7. Serve with Wonton Chips.
