Mocha Chocolate Frosting
Ingredients:
1½ cups semi-sweet chocolate
1 cup unsalted butter, softened at room temperature
2 teaspoons vanilla extract
4 cups icing sugar, divided
1/3 cup heavy cream
1/3 cup strong cold coffee
2 to 3 tablespoons Kahlúa coffee liqueur
Directions:
1. Melt chocolate in microwave or in double boiler. Gradually stir in heavy cream and set aside to cool.
2. In separate bowl beat butter, 2 cups of icing sugar and vanilla extract until pale and fluffy.
3. Add melted chocolate mixture to butter mixture and beat until smooth and fluffy.
4. With mixer on medium, add remaining icing sugar in 2 parts, alternating with cold coffee and coffee liqueur. Beat on high for 2 to 3 minutes or until fluffy and smooth.
5. Chill in refrigerator for 20 to 30 minutes before using in your recipe.

Make sure all of your ingredients for preparing cake (eggs included) are at room temperature before starting the baking process. Cold ingredients won’t trap and hold air bubbles efficiently, and air bubbles are what give cakes their rise.
Always bake cake in preheated oven. If you put a cake into an oven that's not hot enough, it will affect the way cake rises.
Cakes are generally best placed on the middle shelf of preheated oven to ensure even cooking and proper rise.
