Appetizers prep is all about assembling and presentation
Artichoke Squares with Mozzarella
Ingredients:
2 jars (6 oz/180 g) marinated artichokes
5 medium size eggs
1/3 cup bread crumbs
2 teaspoon2 butter
2 tablespoons onion, minced
2 cups ground mozzarella cheese
2 tablespoons chopped parsley
Salt to taste
Freshly ground black pepper to taste
Makes 24 appetizers
Note: If not baking right away, cover prepared mixture and refrigerate.
Directions:
1. Drain liquid from 1 jar of artichokes and reserve, discard liquid from second jar of artichokes. Finely chop all artichokes and set aside.
2. Grease 8"x12" (20x30 cm) baking dish.
3. In a small saucepan melt 2 teaspoons butter and cook onion for about 3 minutes or until soft. Add reserved liquid from jar of artichokes. Cook about 3 minutes and set aside.
4. In a medium size bowl beat eggs until blended. Stir in mozzarella cheese, bread crumbs, cooked onion, parsley and season with salt and ground pepper to taste.
5. Preheat oven to 325º F (160º C).
6. Spread prepared mixture evenly in greased baking dish.
7. Bake in preheated oven for about 30 to 35 minutes until set and lightly browned.
8. Cool 10 minutes in baking dish on wire rack, cut lengthwise with knife into 4 strips. Cut each strip crosswise into 6 pieces and arrange on platter; garnish with salad and parsley leaves. Serve hot or cold.
