fresh or frozen strawberries, pureed in a food processor, blender or
envelopes unflavoured gelatin
cups pureed strawberries
cup low-fat plain yogurt
tsp. grated orange rind
In small saucepan or microwave dish, sprinkle gelatin over water; let
5 min to soften.
Heat over low heat until gelatin has dissolved or microwave 50 sec on
(50%). Mix well.

Refrigerate until mixture begins to set i.e. reaches the consistency of
raw egg whites.
In large bowl, beat egg whites until soft peaks form.
Gradually add sugar, beating until stiff peaks form.
Whisk about 1/4 of beaten whites into strawberry mixture; fold in
