Warm New Potato Salad with Pancetta
Dressing
Ingredients for the Salad:
1 kg cooked new potatoes,
sliced
2 green onions, thinly sliced
1 mixture of Pancetta Dressing
Ingredients for the Pancetta Dressing:
8 slices Pancetta or some
other smoked meaty bacon
1/2 cup extra virgin olive
oil
1/4 cup apple cider vinegar
salt and freshly ground
black pepper to taste
Preparation:

Cook new potatoes.

Thinly slice green onions and
set aside.

In the heavy pan cook the pancetta
until crisp, but not burned. Drain off excess fat and break pancetta into
smaller pieces, but leave pancetta in the pan.

Add olive oil, vinegar, season
to taste and just bring to boil. Remove from heat and set aside.

Peel and slice new potatoes
and put them in serving bowl. Pour warm dressing over potatoes, sprinkle
with thinly sliced green onions and toss to cover.

Serve with meat dishes, with
garlic bread or just with fresh bread for delicious lunch.
