Fast Fried Fresh Sardines
1 kg of fresh sardines
1 cup vegetable oil
salt
Preparation:

Clean and wash sardines in cold
water. Sprinkle with salt and put in colander to get rid of extra liquid.

Heat oil in a heavy pan until
hot.

Roll sardines in all purpose
flour and fry in vegetable oil until brown and crispy.

Sprinkle with kosher salt and
dry on paper towel to get rid of excess oil.

Serve hot with fresh bread and
bean salad or any other salad of your choice.
Makes 4 to 5 servings.
Note: Fresh anchovies
could also be prepared that way. This type of food is very popular for
lunch, called marenda in coastal and continental part of Croatia.
