Marinated
Cherry Tomato and Mushroom Salad
Ingredients:
1 pint
small white mushrooms
1
pint cherry tomatoes, halved
if large
1
clove garlic, chopped
1
medium red onion, sliced
2
teaspoons fresh lemon juice
2
tablespoons fresh parsley,
chopped
1/2
teaspoon dry oregano
2/3
cup Sundried Tomato dressing
ground
black pepper to taste
Preparation:
- Prepare
vegetables and place them in a large bowl.
- Add
dressing, parsley,
lemon juice, garlic, oregano, and pepper.
- Toss
well, cover and refrigerate
for couple hours before serving.
- Serve
with garlic bread
for healthy vegetarian meal.
Makes 5 to 6 servings.
