Antioxidant
nutrients like vitamin E protect cell constituents from the
damaging effects of free radicals that, if unchecked, might contribute
to cancer development.
Vitamin E might also block the formation of carcinogenic nitrosamines
formed in the stomach from nitrites in foods and protect against cancer
by enhancing immune function. But most human trials and surveys that
attempted to associate vitamin E intake with cancer incidence have
generally been inconclusive.
