Chicken
Wagon Wheel Casserole
Ingredients:
2 tablespoons vegetable oil
1 medium size onion, chopped
1 garlic clove, minced
1 pound ground chicken
1 teaspoon chili powder
1 teaspoon Vegeta
1 can (28 oz/796 ml) diced tomatoes
1 can (14 oz/398 ml) beans in tomato sauce
2 cups frozen mixed vegetables
2 cups dried wagon wheel pasta
2 tespoons salt
Preparation:
- In a large pot boil water and 2
tespoons of
salt. Stir in pasta
and
cook until pasta is just al dente. Let it drain and set aside.
- In a large heavy saucepan or
Duch oven heat oil
over medium heat.
Add onions and cook until just soft, for about 2 minutes.
- Stir in ground chicken and
garlic, separate
meat with wooden
spoon and cook until brown, for about 5 to 6 minutes.
- Add in Vegeta and chili powder,
diced tomatoes,
chicken broth,
canned beans and frozen vegetables. Bring to boil and cook for about 3
minutes.
- Stir in cooked pasta and cook
for next 3
minutes.
- Transfer to large casserole
dish and bake in
owen for about 30
minutes.
- Serve hot or warm with garlic
bread.
Makes 6 to 8 servings.
