Rice
Salad
Ingredients:
2 cups
cooked white rice
3 teaspoons minced pimiento
1/3 cup green bell pepper, minced
1/3 cup minced onion
1/3 cup rice salad sauce
Salt and pepper to taste
Sauce:
1 tablespoon Dijon mustard
1/4 cup vegetable oil
2 tablespoons Tarragon vinegar
2 tablespoons lemon juice
Makes 4 servings.
Preparation:
- In a large salad bowl mix the
cooked rice, pimiento, pepper and onion.
- Mix all ingredients for sauce.
- Pour the salad sauce over rice
salad and season to taste.
- Mix well and cover with plastic
wrap.
- Refrigerate for one hour.
- Serve cold.
NOTE: If you don't like Tarragon vinegar, replace it with
vinegar of your choice.

A
nutritionally superior method of preparing brown rice known as GABA
Rice or GBR (Germinated Brown Rice) may be used. This involves soaking
washed brown rice for 20 hours in warm water (38°C or 100°F)
prior to cooking it. This process stimulates germination, which
activates various enzymes in the rice. By this method, a result of
research carried out for the United Nations International Year of Rice,
it is possible to obtain a more complete amino acid profile, including
GABA.
GABA (Gamma Gamma Aminobutyric acid is the chief inhibitory
neurotransmitter in the mammalian central nervous system. It plays a
role in regulating neuronal excitability throughout the nervous system.
In humans, GABA is also directly responsible for the regulation of
muscle tone. In insect species GABA acts only on excitatory nerve
receptors.
Although chemically it is an amino acid, GABA is rarely referred to as
such in the scientific or medical communities, because the term "amino
acid," used without a qualifier, refers to the alpha amino acids, which
GABA is not, nor is it incorporated into proteins.
