Stained Glass Cookies

Ingredients:

2 cups butter or margarine
1 cup sugar and
1/3 cup honey
2 large eggs
2 teaspoons vanilla
2 teaspoons lemon juice
5 cups flour
1 teaspoon baking soda

Garnish:

2 tablespoons crushed hard candies 


Preparation:

  • In a mixer or food processor mix butter and sugar until smooth. Add honey, eggs and vanilla. 
  • Sift together flour, baking soda and salt. Add flour mixture to butter mixture and form the dough. 
  • Wrap and chill the dough overnight. 
  • Roll out the dough and cut shapes with cookie cutters. Then cut out areas for "windows" or roll dough and cut shapes with some open spaces and put onto cookies. 
  • Place the cookies on a well greased cookie sheet. 
  • Fill the openings with crushed hard candies. 
  • Preheat the oven to 350º F (180º C). 
  • Bake cookies  for 8-10 minutes or until golden.
  • Let cookies cool for 5 minutes before removing them from the cookie sheet. 
  • Let cool completely on wire rack.
