Cookies
Ingredients:
2/3 cup vegetable shortening
1 egg
1 teaspoon vanilla
2 teaspoons orange
or lemon juice
1-1/2 cups brown
sugar
1-2/3 cups flour
1 teaspoon baking
powder
1/2 teaspoon
baking soda
Pinch of salt
Glaze:
Orange syrup or orange preserve
1/2 cup chopped pecans
Preparation:
- Sift together flour, salt,
baking powder and baking soda
and set aside.
- In a large bowl or food
processor, mix vegetable shortening,
egg, vanilla and brown sugar.
- Add all other ingredients
except pecans and glaze.
- Blend at medium speed until
dough is stiff.
- Preheat oven to 350º F
(180º C).
- Drop mixture by teaspoonfuls
onto ungreased cookie sheet.
- Bake 10 to 12 minutes until
deep golden brown.
- Cool on wire rack.
- Top each cookie with glaze and
chopped pecans.
