Mint
Cookies
Ingredients:
1 cup unsalted butter or margarine
1/2 cup sugar
Pinch of salt
1 1/2 teaspoons mint extract
2 tablespoons crushed dried mint leaves
2 cups flour
Extra sugar for coating
Preparation:
- Mix butter and sugar until
smooth. Add mint extract, mint
leaves, flour and salt. Mix thoroughly.
- Chill dough for at least 1/2
hour.
- When ready to bake, preheat
oven to 350 F. Form the dough
into 1 inch balls and roll them in sugar. Press ball with your
thumb.
- Line cookie sheets with foil or
parchment paper. Place cookies
on cookie sheets and bake 12 to 15 minutes.
- Cool on racks.
Makes about 3 dozen cookies.
