Lemon
Pie Filling
Ingredients:
1 cup
water
1 heaping tablespoon of cornstarch
1 egg, well-beaten
1 cup sugar
1 teaspoon butter, melted
Juice
and
grated rind of a fresh lemon
Preparation:
- Moisten
a heaping
tablespoon
of cornstarch with a little cold water, then add a cup of boiling
water;
stir over the heat till it boils and cook the cornstarch, for about two
or
three
minutes.
- Add
teaspoon of butter and a cup of sugar; take off the heat and, when
slightly cooled, add an egg well beaten and the juice
and
grated rind of a fresh lemon.
- Bake
with a crust. This makes one small
pie.
