Whole
Wheat or Graham Peach Muffins
Ingredients:
2 cups of
whole wheat flour
1/2 teaspoon salt
1 tablespoon sugar
2 eggs, beaten separately
1 cup milk
1 cup water
1 cup peeled and diced fresh
peaches
Makes 12 muffins.
Preparation:
- Mix flour, salt and sugar.
- Beat the eggs until light, add
the milk
and
water, stir this into the dry mixture.
- Lightly stir in peaches.
- Grease muffin pan with cooking
spray. Divide batter between muffin cups.
- Bake in preheated moderate oven
for about 25
to 30 minutes or until golden brown and done.
- Cool completely before removing
from the pan.
NOTE: If you don't have peaches, you can also add 1 cup peeled
and diced fresh apricots to the whole wheat or graham muffins batter
for tasty apricot muffins.
